There are two types of Bistrøtage on the market: Bistrøtage and Bistrøtage Affinage Prolongé.
AP on the label stands for long aging on lees. The bottles are kept ‘sur pointe’ (upside down) and ‘sur latte’ (horizontal) for more than 9 years. Extended lees aging develops more autolysis. This very slow champagne-making process results in more layers of flavors, aromas, and added depth, including earthy notes.
