"Make négociants great again" – this phrase captures the essence of the Champagne Cose project by Victor Allier and Gil Conejo. Victor is a prominent figure in today’s Champagne hospitality scene, known as the owner of Sacré Bistro and Sacré Burger and as a host of some of the finest parties in Champagne. Meanwhile, Gil brings technical expertise as a skilled winemaker, working with renowned producers like René Geoffroy and consulting for over 10 top growers. He truly knows how to craft the best.
Négociants often focus on volume production, but Champagne Cose takes a different path, prioritizing quality at every stage. The highest possible standards are pursued in each decision, from grape selection to bottling, closures, and even label design.
The magic happens in a small garage in Chouilly, where barrels are stacked with care. The concept is straightforward: every year, they purchase grapes from three different top-tier growers. The grapes are pressed at the growers' sites and then transported to Chouilly, where they are aged in small barrels, some even sourced directly from Jacques Selosse.
Quantities are limited, with no blends—just pure élevage in the barrel. Fermentation occurs under natural cork, adding an exclusive touch to the taste, followed by disgorgement. Each bottle is labeled as "COSE" and bears a stamp indicating the growers. In 2022, the grapes included Pinot Noir from Domaine de Bichery, Chardonnay from Roland Champion, and Meunier from Marx Coutelas.
